A star for the Maroons between 1987 and 1991, Jenkins finished her four-year Roanoke career as the sixth all-time leading scorer in team history. She scored 1,235 career points and also finished third on RC's all-time rebounding list with 724 career rebounds. Following her senior season, Jenkins became the first Roanoke women's basketball player to earn First Team All-American honors. A two-time First Team All-Conference selection, Jenkins was also named the Old Dominion Athletic Conference Player of the Year following the 1991 campaign. In her junior season, Jenkins had a 'breakout' season, averaging 13.6 points and 7.1 rebounds per game.

She earned the first of her two All-Conference awards following her junior year. As a senior, Jenkins averaged 13.2 points and 6.6 rebounds a game and led the Maroons to a conference championship and the quarterfinals of the NCAA tournament. In her four-year career, Jenkins helped the Maroons to two conference titles and the team's first two trips to the national postseason. As a four-year player, Jenkins compiled an overall record of 93-20 and helped the 1990-91 team to 28 wins, a total that to this day remains a team record. Jenkins is one of just three Roanoke women's basketball players to have a retired jersey.
